Pasta has always been one of my favorite dishes, so I thought I would kick things off with a fresh and zesty pasta that is perfect for the New Year! The simplicity of this dish is amazing, but it packs a punch in flavor and consists of just four main ingredients. While it has quickly become one of my favorite quick meals, my children aren’t very big fans of dishes that have a lot of large visible ingredients (kids, eh?) so when I make it I keep a portion of noodles plain for them and just add a little parmesan on top.
Doesn’t that look like a rainbow of yum? It will probably take you all of 15 minutes to prepare, which is fabulous for those of us who are short on time but don’t want to crack open a microwave meal. It’s even better for those who want to pack a quick lunch (hello make ahead jar pasta) or get in a healthy bite without spending much prep time. To make it you’re basically going to cook up some penne pasta and green beans, chop up cherry tomatoes and dill, and then toss everything together in a bowl with some spices. Simple, right?
If you aren’t a fan of tomatoes and green beans you can always swap them out for your favorite veggies, but I just love this combination so much and I think the dill really ties it all together. Dill is a strong flavor, so if you do happen to add other vegetables keep in mind that those with a strong or sweet flavor might not mesh quite as well with the powerful dill. A few great suggestions are zucchini, peas, or anything with a nice earthy flavor. This is a cold pasta, so for me I feel like it’s more of a lunch recipe than dinner, but it could go either way really. I just can’t get over those beautiful colors!
While it’s great like it is, you can also add a little Goat cheese topping if you’d like. I love the way Goat cheese and dill tastes together so it’s my choice, but parmesan or Romano are just as good.

- Two cups Penne pasta
- One cup thin green beans, boiled
- One cup red and yellow cherry tomatoes
- Hand full of fresh dill, chopped
- ⅓ cup Rice Wine Vinegar
- ½ cup olive oil
- Black Pepper
- First cook your pasta to your desired firmness then drain and rinse with cool water.
- Pour it into a large bowl and set aside.
- While your pasta is cooking, boil your green beans for five minutes and then set aside to cool.
- Cut your tomatoes in half and add them to your pasta along with your green beans.
- Chop up your dill, toss all remaining ingredients in, mix well and serve.
